  • 49.3 g ground turkey
  • 59.1 g quinoa
  • 51.3 g green bell pepper
  • 1.2 tsp honey
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 0.5111 tsp vegetable oil
  • 1 each chili pepper
  • 1 clove garlic
Method
  1. 01In a mixing bowl, combine ground turkey, cooked quinoa, finely minced green bell pepper, salt, and cracked black pepper.
  2. 02Shape the mixture into small, bite-sized cylindrical logs (approx 5-6 pieces). Wrap each log tightly in plastic wrap, twisting the ends securely.
  3. 03Let the rolls rest in a cool place for at least 15-30 minutes (or up to 6 hours chilled) to allow the flavors to meld.
  4. 04Unwrap the bites. Heat vegetable oil in a non-stick skillet over medium heat.
  5. 05Add the turkey bites and sear for 4 to 5 minutes, turning regularly, until lightly browned on all sides and cooked through to an internal temperature of 165°F (74°C).
  6. 06Brush lightly with honey during the final minute of cooking to glaze.
  7. 07Transfer to a plate and serve warm, garnished with sliced fresh bird's-eye chili and raw garlic slices.
