  • 98.3 g lentils
  • 34.2 g sweet potato
  • 0.5 tsp ground cumin
  • 0.25 tsp cayenne pepper
  • 0.25 tsp salt
  • 5 g olive oil
  • 2.1 g tamarind paste
  • 0.25 tsp granulated sugar
  • 1 sprig fresh cilantro
Method
  1. 01In a small dish, mix the tamarind paste with the granulated sugar and 1 tsp of warm water until smooth to create the glaze.
  2. 02In a mixing bowl, combine the cooked brown lentils and finely grated sweet potato. Season with ground cumin, cayenne pepper, and salt.
  3. 03Using a fork or potato masher, mash the mixture slightly until cohesive. Form into 3 to 4 small, dense patties.
  4. 04Heat a heavy-bottomed cast iron skillet over medium heat with the olive oil. Once shimmering, add the fritters.
  5. 05Pan-sear for 3 to 4 minutes per side until deeply golden brown, caramelized, and crisp on the exterior.
  6. 06Remove the fritters from the skillet and immediately brush the tops with the tamarind glaze. Garnish with chopped fresh cilantro and serve warm.
