- 98.3 g lentils
- 34.2 g sweet potato
- 0.5 tsp ground cumin
- 0.25 tsp cayenne pepper
- 0.25 tsp salt
- 5 g olive oil
- 2.1 g tamarind paste
- 0.25 tsp granulated sugar
- 1 sprig fresh cilantro
Method
- 01In a small dish, mix the tamarind paste with the granulated sugar and 1 tsp of warm water until smooth to create the glaze.
- 02In a mixing bowl, combine the cooked brown lentils and finely grated sweet potato. Season with ground cumin, cayenne pepper, and salt.
- 03Using a fork or potato masher, mash the mixture slightly until cohesive. Form into 3 to 4 small, dense patties.
- 04Heat a heavy-bottomed cast iron skillet over medium heat with the olive oil. Once shimmering, add the fritters.
- 05Pan-sear for 3 to 4 minutes per side until deeply golden brown, caramelized, and crisp on the exterior.
- 06Remove the fritters from the skillet and immediately brush the tops with the tamarind glaze. Garnish with chopped fresh cilantro and serve warm.
