Ingredients
- 61.8 g Shrimp, raw, peeled and deveined, finely chopped
- 30.0 g Scallions, fresh, sliced into 2-inch lengths
- 47.3 g Egg whites, large
- 15.0 g All-purpose flour
- 11.0 ml Soy sauce
- 8.9 ml Rice vinegar
- 5.5 g Grapeseed oil (for cooking)
Method
- 01In a medium bowl, whisk together the flour, egg whites, soy sauce, and a splash of water until a thin, smooth batter forms.
- 02Fold in the chopped shrimp and fresh scallions so they are well-coated.
- 03Heat the oil in a small non-stick skillet over medium-high heat.
- 04Once the oil shimmers, pour in the batter, spreading it evenly to the edges of the pan.
- 05Cook for 3-4 minutes until the bottom is deeply golden and crispy.
- 06Carefully flip the pancake and cook for another 2-3 minutes, pressing down with a spatula to ensure the shrimp is cooked through and the edges are lacy and crisp.
- 07Serve immediately with a side of rice vinegar and a dash of soy sauce for dipping.
