  • 28 g ground lamb
  • 21.5 g bulgur wheat
  • 29.8 g grape tomatoes
  • 19.8 g red onion
  • 9.8 g cucumber
  • 1 tbsp za'atar spice blend
  • 1 clove garlic
  • 1 tsp extra-virgin olive oil
  • 1 tsp lemon juice
  • 0.125 tsp salt
Method
  1. 01Place the dry bulgur in a heatproof bowl, pour over 1/2 cup of boiling water, cover, and let stand for 15 minutes until tender. Drain any remaining excess liquid thoroughly.
  2. 02Heat the extra-virgin olive oil in a small skillet over medium-high heat. Add the ground lamb and brown for 5 to 6 minutes, breaking it into small bits, until deeply caramelized and an instant-read thermometer reaches 160°F (71°C). Drain excess fat if needed.
  3. 03Add the minced red onion and minced garlic to the lamb in the skillet, sautéing for 2 minutes until fragrant and softened.
  4. 04Fold in the drained bulgur, 2/3 of the za'atar spice blend, and salt. Sauté for 1 to 2 minutes to toast the spices and allow the flavors to bloom.
  5. 05Remove the skillet from heat and stir in the diced grape tomatoes and cucumber.
  6. 06Transfer to a serving bowl, sprinkle with the remaining za'atar spice blend, and drizzle with fresh lemon juice before serving.
