Cajun-Style Blackened Salmon Bites with Arugula and Lemon

Ingredients
- 64.8 g pink salmon
- 0.4667 tsp olive oil
- 4.6 g Cajun seasoning blend
- 69.4 g sweet potato
- 27.8 g yellow onion
- 0.1167 tsp salt
- 23.1 g arugula
- 0.92 tsp lemon juice
Method
- 01Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 02Toss the cubed sweet potatoes and minced yellow onion with half of the olive oil and salt. Spread on the baking sheet and roast for 15-18 minutes until tender and caramelized.
- 03While the sweet potatoes roast, toss the salmon cubes with the remaining olive oil and Cajun seasoning until evenly coated.
- 04Heat a heavy cast-iron skillet over high heat until hot. Add the spiced salmon bites and sear for 60-90 seconds per side until a blackened crust forms and the salmon reaches an internal temperature of 145°F (63°C).
- 05Arrange the fresh arugula on a serving plate, top with the roasted sweet potatoes and onions, and nestle the blackened salmon bites on top. Squeeze fresh lemon juice over the dish before serving.
