Moussaka with Ground Beef and Béchamel

Ingredients
- 680 g eggplant
- 201.1 g ground beef
- 150 g yellow onion
- 4 clove garlic
- 411 g canned crushed tomatoes
- 0.5 cup dry red wine
- 1 tsp ground cinnamon
- 0.5 tsp ground nutmeg
- 15 g fresh parsley
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 480 ml whole milk
- 1 each egg
- 3 tbsp olive oil
- 1.5 tsp salt
- 1 tsp black pepper
Method
- 01Preheat oven to 400°F (200°C). Arrange eggplant planks on a baking sheet, brush with 2 tbsp extra virgin olive oil, and season with 1/2 tsp salt and 1/4 tsp black pepper. Bake for 20-25 minutes until softened.
- 02In a skillet, heat 1 tbsp extra virgin olive oil over medium-high heat. Add ground beef and cook 5-7 minutes until browned, breaking it up; ensure ground beef reaches an internal temperature of 160°F (71°C). Drain excess fat.
- 03Add chopped onion and minced garlic to the skillet; sauté for 5 minutes until soft. Stir in crushed tomatoes, red wine, ground cinnamon, half of the ground nutmeg (1/4 tsp), 1/2 tsp salt, and 1/2 tsp black pepper. Simmer over low heat for 20 minutes, then stir in fresh parsley.
- 04Melt butter in a saucepan over medium heat. Whisk in all-purpose flour for 1-2 minutes to form a roux. Gradually whisk in whole milk, simmering until thickened (5-7 minutes). Remove from heat and whisk in beaten egg, remaining 1/4 tsp ground nutmeg, 1/2 tsp salt, and 1/4 tsp black pepper.
- 05Lower oven temperature to 350°F (175°C). Grease a baking dish, layer half the eggplant, spoon the meat sauce over top, add remaining eggplant, and pour béchamel evenly over the top.
