  • 27 g bulgur wheat
  • 31.3 g ground beef
  • 45 g yellow onion
  • 0.7333 tsp olive oil
  • 0.25 tsp ground allspice
  • 0.25 tsp ground cinnamon
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 2 sprig fresh mint leaves
Method
  1. 01Rinse the dry bulgur wheat under cold water, then soak in warm water for 20 minutes until softened. Drain thoroughly, squeezing out excess moisture using a clean kitchen towel.
  2. 02In a mixing bowl, combine the soaked bulgur wheat, half of the minced yellow onion (about 20g), and 20g of raw ground beef. Season with half of the ground allspice, ground cinnamon, salt, and black pepper. Knead vigorously by hand until the mixture forms a cohesive, tacky dough.
  3. 03Heat half of the olive oil in a small pan over medium heat. Sauté the remaining minced yellow onion (25g) and remaining raw ground beef (25g) with the rest of the allspice, cinnamon, salt, and black pepper until the beef is fully browned and reaches an internal temperature of 160°F (71°C).
  4. 04Press half of the bulgur-beef dough firmly into the base of a small baking dish to form the bottom layer.
  5. 05Spread the cooked beef and onion mixture evenly over the bottom layer, then top with the remaining bulgur-beef dough, smoothing the surface with wet fingers.
  6. 06Score the top surface into diamond patterns using a sharp knife and brush with the remaining olive oil.
  7. 07Bake at 375°F (190°C) for 20-25 minutes until the kibbeh is browned, firm, and golden-crisp at the edges.
  8. 08Garnish with fresh mint leaves and serve warm.
