- 200 g callaloo
- 40 g yellow onion
- 1 clove garlic
- 12.8 g coconut oil
- 10 g ketchup
- 124.4 g plantains
- 1 pinch salt
Method
- 01Heat half of the coconut oil in a cast-iron skillet over medium-high heat.
- 02Add the green plantain coins and fry until deeply golden and crisp on both sides, about 3 minutes per side. Season with a pinch of salt, then remove and set aside.
- 03In the same skillet, add the remaining coconut oil, diced yellow onion, and minced garlic; sauté until softened and aromatic, about 2 minutes.
- 04Add the shredded seitan and sear until it develops a light crust.
- 05Fold in the chopped callaloo and a splash of water, covering briefly to let the greens wilt and turn vibrant green.
- 06Stir in the Scotch Bonnet ketchup to combine evenly.
- 07Return the fried plantains to the skillet briefly to warm through, then plate immediately.
