Celeriac and Grass-Fed Beef Bites with Whole Grain Dijon and Vidalia Onion Jam

Ingredients
- 311.4 g celeriac
- 36.4 g 100% grass-fed ground beef
- 37.4 g Vidalia onion
- 0.5 tsp olive oil
- 0.125 tsp salt
- 7.8 g whole grain Dijon mustard
Method
- 01Peel the celeriac and slice into 1/2-inch thick rounds. Steam for 8-10 minutes until tender enough to pierce with a fork, but firm enough to hold their shape.
- 02Heat olive oil in a skillet over medium-high heat. Add the ground beef and cook, breaking into small crumbles, for 4-5 minutes until browned throughout and internal temperature reaches 160°F (71°C).
- 03Add the finely diced Vidalia onion and salt to the skillet with the beef. Sauté over medium heat for 3-4 minutes until the onions are soft and translucent.
- 04Arrange the warm steamed celeriac rounds on a serving plate.
- 05Spoon the browned beef and Vidalia onion mixture evenly over each celeriac round.
- 06Dollop whole grain Dijon mustard onto each bite and serve immediately.
