  • 137.8 g seitan
  • 1.1 tbsp sesame oil
  • 121.2 g udon noodles
  • 165.3 g snow peas
  • 2.2067 each scallion
  • 1.1 tbsp maple syrup
  • 2.2 clove garlic
  • 1.1 tsp fresh ginger
  • 1.1 tbsp soy sauce
  • 1.1 tsp sesame seeds
Method
  1. 01Bring a pot of water to a boil and cook udon noodles for 2-3 minutes until tender. Drain and toss with 1 tsp sesame oil to prevent sticking.
  2. 02In a small bowl, whisk together maple syrup, minced garlic, grated ginger, and soy sauce to prepare the glaze.
  3. 03Heat the remaining sesame oil in a wok or heavy skillet over high heat. Add cubed seitan and sear until deeply browned and slightly crispy, about 3-4 minutes.
  4. 04Add trimmed snow peas to the wok and stir-fry rapidly for 90 seconds until vibrant green and tender-crisp.
  5. 05Reduce heat to medium, add cooked udon noodles and glaze. Toss constantly for 1-2 minutes until noodles absorb glaze and sauce turns glossy.
  6. 06Transfer to a bowl and garnish with sliced scallions and toasted sesame seeds.
