Ingredients
- 137.8 g seitan
- 1.1 tbsp sesame oil
- 121.2 g udon noodles
- 165.3 g snow peas
- 2.2067 each scallion
- 1.1 tbsp maple syrup
- 2.2 clove garlic
- 1.1 tsp fresh ginger
- 1.1 tbsp soy sauce
- 1.1 tsp sesame seeds
Method
- 01Bring a pot of water to a boil and cook udon noodles for 2-3 minutes until tender. Drain and toss with 1 tsp sesame oil to prevent sticking.
- 02In a small bowl, whisk together maple syrup, minced garlic, grated ginger, and soy sauce to prepare the glaze.
- 03Heat the remaining sesame oil in a wok or heavy skillet over high heat. Add cubed seitan and sear until deeply browned and slightly crispy, about 3-4 minutes.
- 04Add trimmed snow peas to the wok and stir-fry rapidly for 90 seconds until vibrant green and tender-crisp.
- 05Reduce heat to medium, add cooked udon noodles and glaze. Toss constantly for 1-2 minutes until noodles absorb glaze and sauce turns glossy.
- 06Transfer to a bowl and garnish with sliced scallions and toasted sesame seeds.
