Ingredients
- 21.3 g paneer
- 0.5 each green bell pepper
- 92.1 g sweet potato
- 0.4222 tsp olive oil
- 0.25 tsp ground cumin
- 0.25 tsp ground turmeric
- 0.25 tsp chili powder
- 1 tsp lemon juice
- 0.125 tsp salt
- 2 tbsp fresh mint leaves
- 2 tbsp fresh cilantro
Method
- 01Place the cubed sweet potato in a steamer basket over boiling water for 6-8 minutes until tender-firm, then set aside to cool.
- 02In a bowl, whisk together the olive oil, ground cumin, ground turmeric, chili powder, and salt. Add the paneer cubes, green bell pepper squares, and steamed sweet potato, tossing to coat.
- 03Thread the paneer, pepper, and sweet potato alternately onto wooden skewers.
- 04Heat a non-stick pan over medium-high heat and sear the skewers for 1-2 minutes per side until the paneer is golden-brown and peppers are slightly charred.
- 05Finish with a squeeze of fresh lemon juice and serve with a side of freshly blended mint-cilantro chutney.
