  • 21.3 g paneer
  • 0.5 each green bell pepper
  • 92.1 g sweet potato
  • 0.4222 tsp olive oil
  • 0.25 tsp ground cumin
  • 0.25 tsp ground turmeric
  • 0.25 tsp chili powder
  • 1 tsp lemon juice
  • 0.125 tsp salt
  • 2 tbsp fresh mint leaves
  • 2 tbsp fresh cilantro
Method
  1. 01Place the cubed sweet potato in a steamer basket over boiling water for 6-8 minutes until tender-firm, then set aside to cool.
  2. 02In a bowl, whisk together the olive oil, ground cumin, ground turmeric, chili powder, and salt. Add the paneer cubes, green bell pepper squares, and steamed sweet potato, tossing to coat.
  3. 03Thread the paneer, pepper, and sweet potato alternately onto wooden skewers.
  4. 04Heat a non-stick pan over medium-high heat and sear the skewers for 1-2 minutes per side until the paneer is golden-brown and peppers are slightly charred.
  5. 05Finish with a squeeze of fresh lemon juice and serve with a side of freshly blended mint-cilantro chutney.
