  • 70.3 g ground turkey
  • 19.3 g spinach
  • 8.4 g almonds
  • 0.6 tsp olive oil
  • 1.2 pinch salt
  • 1.2 pinch black pepper
  • 41.7 g sweet potato
  • 1.2 tsp lemon juice
  • 0.6 tsp lemon zest
  • 1.2 sprig parsley
Method
  1. 01Preheat oven to 400°F (200°C). Lightly grease a parchment-lined baking sheet with olive oil.
  2. 02In a bowl, mix ground turkey, finely chopped raw spinach, crushed almonds, sea salt, and black pepper until well combined.
  3. 03Form the mixture into two small, tight cylinders.
  4. 04Place roll-ups on the baking sheet and bake for 12 to 15 minutes, until cooked through and internal temperature reaches 165°F (74°C).
  5. 05Meanwhile, steam diced sweet potato for 10 minutes until fork-tender, then mash with fresh lemon juice.
  6. 06Plate the sweet potato mash alongside the cooked turkey roll-ups.
  7. 07Garnish with chopped parsley and freshly grated lemon zest before serving.
  8. 08Cook the stuffed turkey until the center of the stuffing and the thickest part of the turkey each reach an internal temperature of 165°F (74°C) before serving.
