Pan-Seared Turkey and Sweet Potato Hash with Wilted Kale and Toasted Almonds

Ingredients
- 206.8 g ground turkey
- 285.1 g sweet potato
- 81.5 g kale
- 0.9 tbsp olive oil
- 0.5 tsp smoked paprika
- 0.25 tsp salt
- 0.25 tsp black pepper
- 1 tbsp lemon juice
- 6 g sliced almonds
Method
- 01Heat a large cast iron skillet over medium-high heat with half of the olive oil. Add ground turkey, breaking it up with a wooden spoon, and sear until thoroughly browned, cooked through, and reaches an internal temperature of 165°F (74°C), about 6 to 8 minutes. Transfer turkey to a plate.
- 02In the same skillet, add remaining olive oil and diced sweet potatoes. Toss to coat and cook undisturbed for 4-5 minutes to brown. Add 2 tbsp of water, cover, and steam for 3 minutes until fork-tender.
- 03Return cooked turkey to skillet and stir in chopped kale, smoked paprika, salt, and black pepper. Sauté for 2 minutes until kale is wilted and bright green.
- 04Remove skillet from heat and drizzle with fresh lemon juice.
- 05Transfer hash to a serving bowl and scatter dry-roasted chopped almonds on top before serving.
