  • 206.8 g ground turkey
  • 285.1 g sweet potato
  • 81.5 g kale
  • 0.9 tbsp olive oil
  • 0.5 tsp smoked paprika
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp lemon juice
  • 6 g sliced almonds
Method
  1. 01Heat a large cast iron skillet over medium-high heat with half of the olive oil. Add ground turkey, breaking it up with a wooden spoon, and sear until thoroughly browned, cooked through, and reaches an internal temperature of 165°F (74°C), about 6 to 8 minutes. Transfer turkey to a plate.
  2. 02In the same skillet, add remaining olive oil and diced sweet potatoes. Toss to coat and cook undisturbed for 4-5 minutes to brown. Add 2 tbsp of water, cover, and steam for 3 minutes until fork-tender.
  3. 03Return cooked turkey to skillet and stir in chopped kale, smoked paprika, salt, and black pepper. Sauté for 2 minutes until kale is wilted and bright green.
  4. 04Remove skillet from heat and drizzle with fresh lemon juice.
  5. 05Transfer hash to a serving bowl and scatter dry-roasted chopped almonds on top before serving.
