Ingredients
  • 16.6 g bulgur wheat
  • 30 g grape tomatoes
  • 30 g cucumber
  • 15 g shallot
  • 15 g fresh parsley
  • 5 g fresh mint
  • 73.8 g seitan
  • 1 tsp Aleppo pepper
  • 4 g extra-virgin olive oil
  • 1 tbsp lemon juice
  • 0.25 tsp salt
Method
  1. 01Place the dry bulgur wheat in a heatproof bowl, pour over boiling water to cover, and let stand for 15 minutes until tender; drain thoroughly to remove excess liquid.
  2. 02In a large mixing bowl, combine the drained bulgur, diced cucumber, halved grape tomatoes, minced shallot, chopped parsley, and chopped mint.
  3. 03Add the diced steamed seitan to the bowl with the vegetable mixture.
  4. 04Pour in the extra-virgin olive oil, freshly squeezed lemon juice, salt, and three-quarters of the Aleppo pepper.
  5. 05Toss all ingredients together gently until thoroughly mixed and evenly coated.
  6. 06Let the salad rest at room temperature for 5 minutes so the flavors marry. Transfer to a chilled serving bowl and garnish with the remaining Aleppo pepper before serving.
