Steamed Pork and Kimchi Mandu with Soy-Vinegar Dipping Sauce

Ingredients
- 80.5 g ground turkey
- 32.3 g kimchi
- 27 g spinach
- 13.4 g dumpling wrapper
- 1 tbsp soy sauce
- 1 tsp rice vinegar
- 1 pinch toasted sesame seeds
Method
- 01In a small bowl, combine ground turkey, finely chopped kimchi, and blanched/squeezed spinach. Mix thoroughly until sticky.
- 02Place equal portions of the turkey filling into each wrapper. Moisten wrapper edges with water, fold over into a half-moon, and seal tightly with pleats.
- 03Line a bamboo steamer with parchment paper and arrange mandu inside. Set over boiling water and steam for 8-10 minutes until wrappers are translucent and turkey reaches an internal temperature of 165°F (74°C).
- 04While mandu are steaming, whisk together soy sauce, rice vinegar, and toasted sesame seeds in a small bowl.
- 05Serve mandu hot directly from steamer with dipping sauce on the side.
