Ingredients
- 185 g grass-fed ground beef
- 1 tsp extra-virgin olive oil
- 5 g Cajun seasoning
- 10 g garlic
- 0.25 tsp salt
- 170 g sweet potato
- 250 g Brussels sprouts
Method
- 01Heat a heavy cast-iron skillet over medium-high heat with olive oil.
- 02Add the grass-fed ground beef and cook, breaking it up with a wooden spoon, for 5 to 7 minutes until fully cooked through, browned, and crispy at the edges. Ensure beef reaches an internal temperature of at least 160°F (71°C). Remove the beef with a slotted spoon, leaving rendered fat in the pan.
- 03Add the small-diced sweet potatoes to the skillet, cover with a lid, and steam/cook for 3-4 minutes until they begin to soften.
- 04Uncover the skillet, add the halved Brussels sprouts, and sauté over medium-high heat until the edges are charred and tender.
- 05Stir in the minced garlic, Cajun seasoning, and salt. Toss for 1 minute until the spices bloom and garlic becomes aromatic.
- 06Fold the cooked beef back into the skillet to heat through and serve immediately.
