  • 55.1 g salmon fillet
  • 0.3913 tsp sesame oil
  • 0.5 tsp fresh ginger
  • 0.5 tsp soy sauce
  • 0.25 tsp sesame seeds
  • 66.2 g sweet potato
  • 100 g spinach
  • 5 g garlic
  • 0.8 g olive oil
  • 0.125 tsp salt
Method
  1. 01Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 02Toss the cubed sweet potatoes with 2 g (half) of the olive oil and a pinch of salt. Spread evenly on the baking sheet and roast for 15-18 minutes until tender and caramelized around the edges.
  3. 03In a small bowl, marinate the cubed salmon in sesame oil, grated ginger, soy sauce, and toasted sesame seeds for 5 minutes.
  4. 04Heat the remaining 2 g of olive oil in a non-stick skillet over medium-high heat. Add the minced garlic and cook for 30 seconds until fragrant.
  5. 05Add the marinated salmon bites to the skillet and sear for 2 to 3 minutes, turning until opaque throughout and cooked to an internal temperature of 145°F (63°C).
  6. 06Reduce the heat to low, add the spinach, and stir gently for 60 seconds until just wilted. Serve immediately with the roasted sweet potatoes.
