  • 101.6 g Soy sauce, brown sugar, sesame oil, and garlic mixture

  1. 01In a mixing bowl, combine the thinly sliced sirloin with the grated Asian pear, soy sauce, minced garlic, a touch of brown sugar, and sesame oil. Let it marinate for at least 30 minutes to allow the enzymes in the pear to tenderize the fibers.
  2. 02Heat a heavy-bottomed cast iron skillet or a tabletop grill over high heat until it begins to wisps smoke. Add the beef in a single layer, ensuring you don't overcrowd the pan; you want a hard sear, not a steam. Cook for 2-3 minutes, turning once, until the edges are caramelized and charred.
