Ingredients
  • 140 g white beans
  • 300 g napa cabbage kimchi
  • 34 g gochujang paste
  • 2 clove garlic
  • 1 tsp sesame oil
  • 1 cup vegetable broth
  • 1 tsp soy sauce
  • 20.4 g scallions
Method
  1. 01Soak dry white beans in cold water overnight. Drain and rinse.
  2. 02Place soaked beans in a pot covered with 3 inches of water. Bring to a boil, reduce heat to low, and simmer for 45-60 minutes until tender. Drain, reserving cooked beans (140g yield from 56.2g dry).
  3. 03In a Dutch oven, heat sesame oil over medium heat. Add minced garlic, half of the sliced scallions, chopped kimchi, and gochujang paste. Sauté for 3-4 minutes until fragrant.
  4. 04Add cooked white beans, vegetable broth, and soy sauce. Bring to a gentle simmer, cover, and braise for 15 minutes allowing flavors to integrate.
  5. 05Ladle stew into a deep bowl and garnish with remaining fresh scallions.
