Braised White Bean and Napa Cabbage Stew with Gochujang and Scallions

Ingredients
- 140 g white beans
- 300 g napa cabbage kimchi
- 34 g gochujang paste
- 2 clove garlic
- 1 tsp sesame oil
- 1 cup vegetable broth
- 1 tsp soy sauce
- 20.4 g scallions
Method
- 01Soak dry white beans in cold water overnight. Drain and rinse.
- 02Place soaked beans in a pot covered with 3 inches of water. Bring to a boil, reduce heat to low, and simmer for 45-60 minutes until tender. Drain, reserving cooked beans (140g yield from 56.2g dry).
- 03In a Dutch oven, heat sesame oil over medium heat. Add minced garlic, half of the sliced scallions, chopped kimchi, and gochujang paste. Sauté for 3-4 minutes until fragrant.
- 04Add cooked white beans, vegetable broth, and soy sauce. Bring to a gentle simmer, cover, and braise for 15 minutes allowing flavors to integrate.
- 05Ladle stew into a deep bowl and garnish with remaining fresh scallions.
