Traditional Garlic-Ginger Seitan Silog with Wilted Chard and Red Rice Blend

Ingredients
- 187.5 g Traditional seitan in chunks
- 91.5 g White & brown basmati rice, red rice, wild rice, red quinoa blend
- 62.4 g Rainbow swiss chard
- 27.3 g Extra virgin olive oil
- 6.3 g Fresh garlic, minced
- 4.1 g Fresh ginger, grated
Method
- 01Prepare the rice according to package directions, ensuring it is fluffy.
- 02Heat half the olive oil in a wide pan over medium-high heat. Add 10g of the minced garlic and sauté until fragrant and golden. Toss in the cooked rice, stirring quickly to toast the grains until they are slightly crisp. Set aside.
- 03In the same pan, heat the remaining oil. Add the seitan chunks, the remaining garlic, and the grated ginger. Sear the seitan until the edges are deeply golden and caramelized.
- 04Add the rainbow chard to the pan with the seitan. Toss until the greens are just wilted and glossy from the infused oil, about 2 minutes.
- 05To plate, mound the garlicky rice on one side of a wide bowl. Arrange the ginger-seitan and wilted chard alongside. Serve hot, traditionally paired with a side of cane vinegar for dipping.
