Finely mince the chicken breast, water chestnuts, ginger, and half of the scallions. Mix together in a small bowl with a splash of soy sauce to bind.

Place a small teaspoon of the chicken mixture into the center of each wonton wrapper. Wet the edges with water, fold into a pouch, and pinch the top to seal tightly.

Arrange the bok choy in a bamboo steamer basket. Place the wontons on top of the leaves.

Set the steamer over a wok of boiling water. Steam for 6-8 minutes until the chicken is cooked through and the wrappers are translucent and tender.
